Discover the authentic taste of Manchego cheese, made with sheep's milk from the Manchega breed. This cheese is aged for at least two months and up to four months, giving it a firm texture and a slightly acidic flavour that intensifies with curing. The rind is hard and yellowish-green to blackish, while the paste is compact and creamy, ranging from white to ivory-yellow. The cheese has small and unevenly distributed eyes, and a buttery mouthfeel.

Manchego cheese is produced following a traditional process that involves collecting and transporting the milk to the factory, heating it between 28°C and 32°C for 30 to 60 minutes until it coagulates, draining and pressing the curd in moulds for at least four hours, unmoulding and salting by immersion in brine, and drying and maturing in controlled chambers.

The ingredients are simple and natural: Manchega sheep's milk, anti-butyric salts, rennet and salt. Enjoy this cheese on its own, with bread, honey, jam, nuts, or wine.
