This Mahon cheese is a cured cow’s milk cheese produced on the island of Menorca under the Mahón‑Menorca D.O.P, where strong sea winds, humidity and traditional maturation shape its distinctive character. Aged for over six months, it develops a firm, dense texture and a flavour profile that becomes progressively more intense as it matures.
During curing, the cheese is regularly washed with olive oil and paprika, forming its characteristic orange‑brown rind and contributing subtle fruity and savoury notes. The paste is compact and crumbly, with small irregular eyes and a long, lingering finish that combines salinity, nuttiness and gentle spice.
Mahon cheese has a unique square form with softened edges, a result of the traditional cloth‑wrapping method used during pressing. This wedge format offers a practical way to portion the cheese while preserving the balance between rind and paste, ensuring consistency in flavour and texture from first cut to last.
