This Idiazabal Cheese Wedge is a true expression of Basque cheesemaking, produced in northern Spain under the strict rules of the D.O.P. designation. Made exclusively from raw sheep’s milk, it reflects a landscape shaped by mountain pastures, open fires and generations of patient, hands‑on craft.

The texture is compact and finely structured, with small pinprick holes running through the paste. It cuts cleanly, remains firm on the knife, and then softens beautifully in the mouth, releasing a pleasant, slightly oily richness. The flavour is deep and savoury, with a characteristic smoky note that comes from traditional curing practices, where cheeses are matured close to fireplaces rather than artificially smoked.

This 250g Idiazabal Cheese Wedge offers a balanced snapshot of the cheese at its best. The sweetness of the sheep’s milk comes through first, followed by gentle warmth and a lingering smokiness that stays on the palate without becoming heavy. It is a cheese with presence, but also restraint, rewarding slow tasting and simple pairings.
