San Marzano tomatoes are Italian plum tomatoes with an elongated oblong shape (similar to the Spanish "tomate de pera"). They have thick inner walls, less water, fewer seed pockets, and fewer seeds. These bright red, firm, fleshy, low-acid, sweet Italian tomatoes have an intense tomato flavour, which makes them the best tomatoes for sauces. They are especially appreciated for use as pizza bases, broken with the hands on top of the dough.
