Experience the authentic taste of Cured Manchego cheese, meticulously crafted and matured for a minimum of 8 months to a maximum of 12 months in a natural cave. This pressed cheese is a testament to traditional cheese-making methods.

The milk is gently heated between 28°C and 32°C for 30 to 60 minutes until it coagulates. The curd is then drained and pressed into moulds for a minimum of 4 hours. After demolding, the cheese is salted by immersion in brine, then dried and matured under controlled conditions in our chambers.
